11 Basic Recipes For When The Munchies Hit You Late at Night

Up in the middle of the night with nothing to eat? No restaurant with delivery open? Here are eleven easy recipes that we believe anybody can make. Happy Cooking!

1. French Toast

Prep Time: 10 minutes

1 egg
3 tablespoons milk
1 tablespoon sugar
2 pieces of bread

Mix the egg milk and sugar all together in a shallow plate and soak the two pieces of bread in it. Once they’ve absorbed all the mixture, fry the bread on low heat in a fry pan with a little bit of oil and voila! Cream, honey and fruit are all great toppings.

 

2. Egg Sandwich

Prep Time: 10 minutes

2 eggs
1 tablespoon mayonnaise
Salt and pepper
Bread

Hard boil the eggs, peel and mash them, add the mayo, salt and pepper and spread it out between two pieces of bread. You can use leftover chicken instead of, or with, the eggs too. Great for picnics and packed lunches, this basic sandwich is easy to make, and easy to add on too, depending on whatever you have lying around in the kitchen.

 

3. Chinese Noodles

Prep Time: 25 minutes

Fistful of noodles
Any leftover meat
Carrots, cabbage, onions, capsicum
Soy sauce, vinegar, chilli sauce
Cheese

Boil some water and throw in the noodles. Let it cook with a pinch of salt and a few drops of oil. Keep checking to see when it gets as soft as you want then drain it, it shouldn’t take much more than 5 minutes. Cut any or all of the vegetable, stir-fry in a little oil, add any or all of the sauces, then chicken from any salan or even keema. Mix in with your noodles and you’re done! The only thing that takes time in this recipe is the chopping up of all the vegetables.

 

4. Egg Fried Rice

Prep Time: 5 minutes

Left over pulao/biryani or boiled rice.
1 egg/garlic
Soy sauce, vinegar, chilli sauce

Beat and scramble an egg, or fry some garlic, if you want garlic fried rice instead. Add the rice and stir-fry with a little bit of all three sauces. You can make the same topping for this as the pasta or have it plain, depending on how much time you have.

 

5. Mashed Potatoes

Prep Time: 20 Minutes

1 Potato
3 Tablespoon milk
1 teaspoon butter
Salt and pepper

Peel, chop and boil potatoes. Once tender, drain and mash them. And milk, butter and salt and pepper. You can also cook the potato in the microwave, just peel and chop it and put it in a bowl of water and cook on high. Just keep checking to see when they’re done with a fork. The water gets really hot, so be careful when taking the bowl out of the microwave.

 

6. Battered Fries

Prep Time: 10 minutes

1 Potato
Chaat masal/ketchup
Maida (flour)
Black pepper

Peel, chop and boil the potato. Once slightly tender, drain, and dip in a thick mixture of flour, water and black pepper. Deep fry. Sprinkle chaat masala and munch away. We promise you’ll never have fries any other way after these.

 

7. Milkshake

Prep Time: 5 minutes

1 glass milk
Fruit of choice
1 tablespoon sugar

Chop you fruit, mangoes and bananas work best. Add the fruit, sugar and milk into a blender. Blend until smooth. You can use strawberries or oranges to make a slushie too, just use ice instead of milk.

 

8. Cheese Omelette

Prep Time: 5 minutes

1 Egg
Cheese
Toppings of your choice

Beat an egg and add whatever you like, (tomatoes, onions, capsicum, chopped sausage or any leftover meat). Pour the egg into a fry pan with a little bit of oil. Once its cooked slightly, sprinkle cheese and fold the omelette in half so that the cheese doesn’t touch the base of the fry pan when you flip the omelette, or it will just melt and stick everywhere.

 

9. Mug Cake

Prep Time: 5 minutes

1 egg
4 tablespoons maida (flour)
2 tablespoon sugar
3 tablespoon cocoa powder (you can also use nutella, peanut butter or coffee)
3 tablespoon milk
3 tablespoon butter/oil

Mix everything together in a mug (if you have any chocolate lying around you can chop it up and add it to the mixture) and microwave on high until you see the cake rising (just under 3 minutes). If you take it out and its not done, just put it back in for a few more seconds. You can top it with ice cream or whipped cream, and nuts.

 

10. Grilled Cheese

Prep Time: 10 minutes

2 pieces of bread
Mustard
Butter
Cheese

Spread mustard on two pieces of bread, and spread butter on the other side of both pieces. Put cheddar and mozzarella on the side with mustard and make and a sandwich, then cook on a frying pan on low heat until the cheese has melted.

 

11. Biscuits and Cream

Prep Time: 5 minutes

Any biscuits
Cream
Sugar

Beat enough cream to cover how many biscuits you want with a fork. Add sugar, you can also add cocoa powder or coffee if you want. Dip the biscuits in the mixture and leave them to soak in it for a while. Crumble some biscuits on top and enjoy!
